Role Overview
The Pastry Cook at Tenwek Hospital is responsible for preparing high-quality baked goods, desserts, and special diet pastries for patients, staff, and visitors. Beyond baking, the role involves supporting general kitchen operations to ensure seamless food production, maintaining strict hygiene standards, and providing timely meal service according to hospital protocols.
Key Responsibilities
Pastry and Baking Duties
Production: Prepare bread, cakes, cookies, chapati, mandazi, scones, and other baked products according to the menu.
Specialized Diets: Prepare special diet pastries as instructed (e.g., low sugar, low salt, soft diet, and gluten-free).
Standards: Ensure all baked products meet hospital nutrition and hygiene benchmarks.
Planning: Organize daily pastry production according to the meal schedule.
Quality Control: Monitor the quality, taste, and presentation of all baked items.
Storage: Ensure proper storage of all baking ingredients.
General Kitchen Support
Assist in food preparation for patient meals when required.
Support the cooking team during busy hours or staff shortages.
Collaborate with cooks, the service team, and supervisors to ensure smooth service.
Follow instructions from the Catering Supervisor or Head Chef.
Hygiene and Safety
Maintain high standards of cleanliness in the pastry section and kitchen.
Adhere to hospital food safety and infection control policies.
Use appropriate protective clothing (apron, cap, gloves) at all times.
Keep equipment clean and report any damage to the supervisor.
Apply the FIFO (First In First Out) method for all ingredients.
Stock Control and Teamwork
Monitor baking ingredients and report any shortages.
Assist in receiving and verifying supplies.
Implement measures to reduce wastage and use ingredients efficiently.
Support the catering team during events, meetings, and special hospital functions.
Train kitchen assistants when necessary.
Qualifications and Experience
Education: Certificate or Diploma in Food Production, Pastry, or Catering.
Experience: Previous experience in a bakery or pastry section is preferred.
Industry Knowledge: Experience in a hospital or institutional kitchen setting is considered an added advantage.
Required Skills
Proficiency in baking and pastry techniques.
Comprehensive knowledge of food hygiene standards.
Strong teamwork and interpersonal skills.
Effective time management and the ability to work under pressure.
Flexibility to assist in various kitchen duties as required.
