Job Description
Frank Management Consult Ltd is seeking a Catering and Hygiene Supervisor to oversee catering operations and maintain high hygiene standards across various facilities. This role involves the strategic design of menus, cost management, and rigorous enforcement of health and safety protocols to enhance organizational performance and productivity.
Key Responsibilities
Menu Planning and Cost Control: Design and plan diverse menus that meet customer expectations while keeping costs under control. Prepare ingredient requisitions to ensure high-quality meal delivery.
Hygiene and Sanitation Management: Oversee hygiene and sanitation standards across all facilities, including branches, warehouses, and offices. Maintain cleanliness throughout all work areas beyond just kitchens.
Resource Management: Procure and manage cleaning equipment, detergents, and other essential supplies. Supervise cleaning services to uphold high standards.
Compliance and Safety: Ensure strict compliance with health and safety regulations, specifically following HACCP guidelines.
Staff Supervision and Training: Train catering staff on proper food preparation and hygiene practices. Monitor performance to ensure adherence to recipes and hygiene standards. Develop staff schedules to meet contractual hours.
Performance and Feedback: Establish channels for staff and customers to provide feedback on meal quality and hygiene. Act on feedback to improve service quality and identify continuous training needs.
Minimum Requirements
Education: Bachelor's Degree in Hotel and Hospitality Management or a Higher Diploma in Hotel Management from a recognized institution.
Experience: Minimum 5 years of working experience as a Catering Manager in a reputable institution.
Technical Expertise: Trained and experienced in HACCP (Hazard Analysis and Critical Control Points). Experience in a busy hospital setting is considered an added advantage.
Technology Proficiency: Proficient in computer skills and conversant with hotel software.
Personal Attributes: Self-motivated, persistent, resolute, and capable of delivering results without close supervision.
