Job Description
Accor is seeking a passionate and experienced Chef de Partie specializing in Mediterranean Cuisine to join our team of Heartists. In this role, you will supervise, coordinate, and participate in the preparation of all mis-en-place, ensuring the highest culinary standards and presentation for our guests.
Key Responsibilities
Supervises, coordinates, and participates in the preparation of all mis-en-place and the setting up of each menu.
Checks daily functions to determine the quantity and kind of items to be prepared.
Prepares requisitions for groceries and perishable food items based on hotel occupancy, functions, and replenishment requirements.
Dispenses food only against micros checks or, in case of system failure, captain orders.
Tastes all food during preparation to ensure top quality.
Guarantees food is prepared efficiently and meets the highest quality standards.
Monitors kitchen personnel to ensure proper handling and use of kitchen utensils.
Verifies that food leaving the kitchen is tasted and presented correctly.
Maintains exceptional cleanliness of all utensils, cooking equipment, working tables, and the cold room at all times.
Ensures proper storage of all food items post-functions to prevent spoilage.
Carries out other culinary duties as assigned by the Executive Chef.
Qualifications and Requirements
Proven experience as a Chef de Partie or equivalent role in a luxury hotel or fine dining establishment.
Culinary degree or diploma is preferred.
Strong knowledge of various cuisines, cooking techniques, and international culinary trends.
Excellent leadership, communication, and interpersonal skills.
Ability to thrive in a fast-paced environment and handle pressure professionally.
Flexibility to work evenings, weekends, and holidays as required.
Strong knowledge of HACCP and food safety standards.
