Role Overview
The FnB Cost Controller Clerk at PrideInn is responsible for supporting the Head F&B Controller in monitoring, controlling, and reporting on all food and beverage-related costs. This role involves rigorous stock-taking, sales verification, and inventory management to ensure financial integrity and operational efficiency within the hotel's outlets and conference facilities.
Key Responsibilities
- Conduct daily beverage stock takes at various outlets and verify that POS sales align with items sold.
- Assist the Head F&B Controller in all assigned financial and monitoring tasks.
- Prepare daily food and beverage reports and monitor adherence to the established budget.
- Audit and ensure that no items are issued from the store without a requisition approved by the relevant Head of Department (H.O.D).
- Perform surprise spot checks across all Food & Beverage outlets.
- Check and verify all voids, discounts, and complimentary items within the POS system, ensuring no bills remain pending.
- Manage conference and function billing, including follow-ups to ensure all revenue is properly captured and procedures are followed.
- Control event and conference numbers to ensure comprehensive revenue charging.
- Perform random checks of menu prices against POS prices whenever price changes occur.
- Participate in official inventory stock-taking and prepare detailed variance analysis reports.
- Perform any other duties as assigned by management.
Qualifications and Experience
- Bachelor’s degree or Diploma in Accounting, Finance, or Hotel Management.
- At least 4 years of experience in F&B cost control within a hotel or hospitality environment.
- Comprehensive knowledge of inventory systems, POS software, and financial reporting.
- Proficiency in Microsoft Excel and specialized hotel management systems (e.g., Micros, Opera, Material Control).
- Strong analytical, numerical, and organizational skills.
- High level of integrity and attention to detail.
